CHARACTERISTICS
Elegant with intense aromas, good structure, soft, pleasant and harmonious, well balanced in the acid/tannic ratio. Good persistence
Grape variety: Barbera
Ruby red color with violet reflections
Hints of strawberry, raspberry and blackberry
Vinification:Vat
Vinification: soft crushing and destemming followed by maceration in contact with the skins for about 15 days in 55hl French oak vats where alcoholic fermentation takes place at a controlled temperature. After racking, the wine remains in the vat for a period of 9/12 months and will be bottled after the following harvest. It remains 6 months in bottle before distribution.
Food pairings: ideal with local cured meats, risottos, roasts and semi-hard cheeses. Excellent with “Bagna Cauda” accompanied by seasonal vegetables.
