Wide and persistent perfume
Vinification: selected grapes are placed outdoors for drying on vertical nets, protected from bad weather but exposed to sun and ventilation. The drying period depends on weather conditions. The wine is then pressed, fermented and filtered and racked into barriques where it is aged for at least one year.
Food pairings: ideal with aged cheese, including blue cheese, as well as dry pastries and cakes.
